How to cut Boneless Shoulder:

 

We recommend starting from the bottom of the shoulder (the “lowest” part) and going to the opposite side, making a horizontal cut. In this way you will be able to enjoy a cured meat that, in the first part, is more fatty and then go on finding a leaner part. And this is one of the essential characteristics of the shoulder: a game of alternating between fat and thin. Also because, unlike ham, shoulder is not well defined in this respect.

 

How to cut Bone-in Shoulder:

 

Cutting the bone-in shoulder is more complicated, and if you have never done it you may be…bewildered!

Below we explain, in a simple way, two cutting modes with their steps.

The first method is to place the shoulder on a convenient “ham rack,” so that it is stable with the bone in view, in front of us. Then we start by cutting the top, most massive part where the flesh is with a horizontal cut until we reach the top of the bone. Immediately after that we cut off the lower part of the shoulder and clean up what is left around the bone with a small knife.

The second method, on the other hand, is to make tralice cuts so that you have a slice with a higher and a lower part, starting on the side opposite the leg. Then you can continue cutting in the same way until you reach the base of the bone. At this point we recommend changing knives and using a smaller boning knife to best clean up the shank bone. Thus begins the fun, seasoned with a pinch of patience and a lot of … appetite!
