La guancia viene salata alla toscana, rivestita di pepe nero e confezionata sottovuoto.

 

  • Come viene realizzata

La carne fresca selezionata, dopo essere stata rifilata, viene messa sotto sale assieme ad aromi naturali. Dopo alcuni giorni viene rivestita con pepe macinato al momento e viene fatta stagionare alcune settimane. 

Tutta la lavorazione viene realizzata a mano.

La guancia è la parte vicina al collo del maile: un taglio tenero e ricco di morbido grasso.

L’alternanza di strati magri e grassi crea l’effetto striato, piacevole da vedere.

Si consiglia il suo utilizzo cotta per sughi come la classica Pasta all’Amatriciana.
